Oprah is a vegan!

Oprah had a guest on her show the other day named Kathy Freston. She wrote a book called Quantum Wellness which seems like your basic run of the mill self help book. Body, mind, spirit-blah blah blah. However she has a chapter dedicated to health and nutrition and talks about conscious eating. She is a vegan and talks about her reasons for doing so and how it changed her life. Oprah was so inspired by this that she herself has decided to do a 21 day cleanse that is outlined in the book. This cleanse eliminates all caffeine, sugar, alcohol, gluten, and all animal products. She of course got a personal chef to come in and cook all of her meals(must be nice) and all of the recipes are posted on her website. I really want me and Patrick to try it but I think Patrick might freak out if I take away the gluten. He has started his bar review class and it is very intense so now might not be the time to take away tortillas and tofutti cuties. I will however be making some of the recipes. I think tonight I will make the Black Bean Cakes with Cilantro Pepper 'Mayo'. I will let you know if they are any good. If anyone is interested in making any of these recipes I am including the link.

OK, so this is great timing. I cannot take out most of those things from my life because my daily iced green tea latte from bucks prohibits me from doing so. Having said that, I am trying to take white flour out of our diet. This started because Chloe gets constipated and we have tried everything. She eats really healthy so she shouldnt have these problems. Well, so far it has worked like a charm. And constipation isnt the only side effect of white flour obviously. So we have all benefitted from eating a pseudo gluten free diet. I am psyched to try some of these out! thanks for sharing!

So I made the bean cakes( i only had one can of black beans so I used pinto beans too) and they were delicious. Where the recipe calls for cajun spice I used Old Bay. Even better than the bean cakes was the mayo. If I ever go back to a non vegan lifestyle I will never use Hellmans again. There is no reason in this world NOT to use veganaise. It has no cholesterol, it is organic and it tastes as good as or better than Hellmans (not weird like miracle whip at all). I followed the recipe except my jalapenos were pickled but I think that made it even better. I also added cilantro.

Oh yum, i am going ot make these for the kids. getting the 'mayo' tomorrow - did you find wheat free bread crumbs at the health food store? do u think they have at natures corner? this is why i love the blog, love these great tidbits of info!

Thanks for the link. I love the portabella mushrooms recipe. I don't know about the 3-hours-in-the-oven part but I love the ingredients. I could see me marinating the mushrooms in a nice balsamic vinegar and adding a few spices and grilling them. Yum! I'm getting hungry!
