Add meat, onion, chili powder, cumin, and 1/2 tsp salt. Cook, breaking meat into pieces with woode spoon, until meat is no longer pink, about 3 minutes.<BR/><BR/>2.Simmer macaroni: Stir in garlic and brown sugar and cook until fragrant, about 30 seconds. Stir in tomato sauce, water, and macaroni. Cover and cook, stirring often and adjusting the heat as needed to maintain vigorous simmer, until macaroni is tender, 10-15 minutes.<BR/><BR/>3.Add cheese:Season with salt and pepper to taste. Stir in 1 cup of cheese and sprinkle remaining cup of cheese over top. Cover and let sit off heat until cheese melts, about 2 minutes. Serve.<BR/><BR/>Variation<BR/>Stir in 1 cup frozen corn, 1 4.5oz can chopped green chilis, drained, and 2 Tb minced fresh cilantro with cheese in step 3.<BR/>*This is serious comfort food, but to make it more healthy I use Pam spray, lean turkey, whole wheat pasta, lowfat cheese and only 1/2 cup in total of cheese all together.
